Cardamom and orange repápalos (bread dumplings)

Ingredients (8)
- 4 free-range eggs
- 1 tsp vanilla extract
- 100g fresh white breadcrumbs
- 1/3 cup (75g) caster sugar, plus extra for dusting
- 4 cups (1L) light olive oil, for deep-frying
Spiced milk
- 300ml milk
- 3 cardamom pods
- Zest of 1 orange

1.In a bowl, beat together the eggs, vanilla, breadcrumbs and sugar to make a batter. Set aside for 30 minutes.

2.To prepare the spiced milk, pour the milk into a saucepan over a medium heat. Add the cardamom and orange zest and warm through for 5 minutes, then set aside to infuse.

3.Pour the oil for deep frying into a large saucepan over a medium-high heat. Heat the oil to 180°C, or if you don’t have a thermometer, heat until a cube of bread browns in 20-25 seconds. Once the oil is hot, drop in dollops (around 2 tbs) of the batter and fry for 3-4 minutes on each side until golden brown. Set aside on a plate lined with paper towel while you fry the rest.

4.Strain the milk and warm through. Serve golden repápalos bathed in the spiced milk and dusted in extra sugar.
