“I just love the strength of cardamom and vanilla together. My sister – and my brother – would say to serve it hot, but I actually like it cold. However you serve it, this dessert is a winner."

Method

  • 1.
In a bowl, beat together the eggs, vanilla, breadcrumbs and sugar to make a batter. Set aside for 30 minutes.
  • 2.
To prepare the spiced milk, pour the milk into a saucepan over a medium heat. Add the cardamom and orange zest and warm through for 5 minutes, then set aside to infuse.
  • 3.
Pour the oil for deep frying into a large saucepan over a medium-high heat. Heat the oil to 180°C, or if you don’t have a thermometer, heat until a cube of bread browns in 20-25 seconds. Once the oil is hot, drop in dollops (around 2 tbs) of the batter and fry for 3-4 minutes on each side until golden brown. Set aside on a plate lined with paper towel while you fry the rest.
  • 4.
Strain the milk and warm through. Serve golden repápalos bathed in the spiced milk and dusted in extra sugar.
