Cauliflower mash with garlic

Ingredients (8)
- 100g parmesan, cubed
- 80g butter, plus some more
- 1 head cauliflower
- Water for steaming
- 100g cream, plus some more
- pinch of pink salt flakes
- freshly cracked black pepper, to taste
- Chopped chives to finish

1.Place parmesan into the Thermomix bowl and mill 10 sec/speed 10. Remove from bowl and set aside.

2.Place butter and garlic into the Thermomix bowl and chop 3 sec/speed 5. Sauté 5 min/Varoma/speed 1. Remove from bowl and set aside.

3.Cut cauliflower into small florets and place into Varoma dish. Fill the Thermomix bowl with water to 1L mark. Set Varoma into position.

4.Steam cauliflower 30 min/Varoma/speed 3.

5.Test the cauliflower is done by pushing with a fork— if not mashing easily, add more cooking time (this can vary depending on how large your cauliflower is and the size you cut the florets).

6.Place cooked cauliflower into the drained Thermomix bowl.

7.Add garlic butter, cream, parmesan and seasoning and blend 10 sec/speed 10.

8.Serve hot with more butter and chopped chives.
