Chai with Indian sweets
Create an authentic atmosphere by serving this spicy chai with traditional Indian sweets.

Ingredients (7)

  • 5 green cardamom pods
  • 2 cinnamon quills
  • 6 whole black peppercorns
  • 2 cups (500ml) milk
  • 1/4 cup (55g) caster sugar
  • 1 1/2 tablespoons loose black tea leaves
  • Ground cinnamon, to dust

Method

  • 1.
    Lightly bruise all the spices in a mortar with a pestle. Transfer to a saucepan with milk, sugar and 1 cup (250ml) cold water. Cook over low heat for 2 minutes, then add the tea leaves and simmer for 1 minute until brewed and aromatic. Strain through a sieve into cups, dust with cinnamon and serve with Indian sweets.
