Rich gravy that's both easy and relatively quick to make: we're sold.

Ingredients (10)

  • 1 x whole barbecue chicken
  • 1 each rosemary & thyme sprigs
  • 4 bay leaves
  • 1 onion, quartered
  • 1 carrot, roughly chopped
  • 3 cups (750ml) Massel Chicken Style Liquid Stock
  • 1 cup (250ml) white wine
  • ¼ cup (35g) plain flour
  • 1 tsp soy sauce
  • 1 tsp Worcestershire sauce

Method

  • 1.
    Preheat oven to 250C.
  • 2.
    Remove flesh from the chicken and set aside for another use (such as soups, salads and sandwiches). Add chicken bones, skin and stuffing to a large roasting pan, then add herbs, bay leaves, onion and carrot. Roast for 15 minutes until golden.
  • 3.
    Remove and add stock and wine to pan, roast for a further 45 minutes. Sprinkle flour over the top of the tray, roast for 15 minutes. Remove and stir to combine.
  • 4.
    Push mixture through a fine sieve, add soy and Worcestershire. Serve warm.
