Cheat’s goat’s cheese pizza with grapes and silverbeet
“Who says pizza needs pepperoni?” – Matt Moran.
Ingredients (9)
- 2 tbs extra virgin olive oil
- 2 red onions, thinly sliced
- 1 red chilli, thinly sliced (optional)
- 2 garlic cloves, crushed
- 1 bunch silverbeet, stems discarded, leaves roughly chopped 4 naan breads
- 200g soft goat’s cheese, crumbled
- 1/3 cup (40g) walnuts
- 250g red grapes, halved
- Honey and lemon wedges, to serve

1.Preheat oven to 220°C. Line 2 baking trays with baking paper.

2.Heat oil in a large frypan over medium heat, cook onion, chilli (if using) and garlic for 4 minutes, stirring constantly. Add silverbeet and cook, stirring constantly, for 2 minutes or until wilted. Drain mixture well using a sieve, discarding liquid.

3.Place naan onto trays and bake for 3-5 minutes or until warmed through.

4.Divide silverbeet mixture between naan bases, top with goat’s cheese and walnuts. Bake for 12-14 minutes or until crust is golden and crisp, and cheese is soft.

5.Top with grapes and drizzle with honey. Serve with lemon wedges.
