Cheat’s rice paper spanakopita

Ready in just 15 minutes, we’ve taken a traditional spanakopita and given it a speedy upgrade, thanks to the use of rice paper. The results are an easy snack or light lunch that’s crunchy on the outside and deliciously cheesy on the inside.
Ingredients (10)
- 80g frozen spinach, thawed
- 40g drained fresh goat’s cheese in olive oil
- 2 long green shallots, thinly sliced
- 1 tbs pine nuts, toasted
- 1 small garlic clove, crushed
- 1 tsp finely grated lemon zest
- 1 tsp finely chopped dill
- 1 egg
- 3 rice paper sheets
- Caraway seeds, to sprinkle

1.Drain spinach and squeeze and discard excess water. Place spinach in a medium bowl with the cheese, shallot, pine nuts, garlic, lemon zest and dill. Season with freshly ground black pepper and mash with a fork to combine.

2.Whisk egg with 2 tsp water in a shallow bowl until smooth. Dip rice paper sheets, one at a time, in egg until fully coated on both sides, letting excess egg drip off. Arrange on a board, slightly overlapping, to form a 40cm-long oval. Arrange spinach mixture along the long edge closest to you. Fold in the sides, then roll up tightly into a long log. Twirl the log to form a scroll. Lightly spray with cooking oil, then sprinkle with caraway seeds, salt flakes and freshly ground black pepper.

3.Place scroll on a small square of baking paper and place in the basket of an air fryer. Cook for 10 minutes at 200°C until crispy on top. Serve warm or at room temperature.
