Ingredients (7)

  • 250g unsalted butter, softened
  • 1 cup pure icing sugar, sifted
  • 1 tsp vanilla extract
  • 2 cups plain flour
  • ½ cup cornflour
  • 100g glacé cherries, finely chopped
  • ¼ cup toasted slivered almonds, finely chopped

Method

  • 1.
    Preheat oven to 160°C. Line 3 baking trays with baking paper.
  • 2.
    Beat butter, icing sugar and vanilla until light and creamy. Sift flours together, add to butter mixture and stir well to combine.
  • 3.
    Add cherries and almonds. Stir to combine. Halve dough and roll out one portion between 2 sheets of baking paper until 5mm thick. Using a 6.5cm round cutter, cut rounds from dough. Transfer to tray. Repeat with remaining portion. Bake for 15 minutes or until light golden. Transfer to a wire rack to cool.
