Chicken, apple and walnut salad
Toasted walnuts add crunchiness to this sweet, juicy chicken salad.

Ingredients (9)

  • 2 skinless chicken breast fillets
  • 2 tablespoons Cajun seasoning*
  • 2 red apples
  • Juice of 1 lemon
  • 4 tablespoons (1/3 cup) creme fraiche
  • 1 tablespoon honey
  • 1 tablespoon white wine vinegar
  • Baby salad leaves (such as watercress and rocket), to serve
  • Toasted walnut pieces, to garnish

Method

  • 1.
    Preheat oven to 180°C. Coat chicken in Cajun seasoning, place on a lightly oiled baking tray and cook for 15 minutes until cooked through. Set aside to cool.
  • 2.
    Slice apples and toss in 1 tablespoon lemon juice. In a bowl, place the creme fraiche, honey, vinegar and 1 tablespoon lemon juice, season to taste, then whisk to combine. Add a little warm water until mixture has consistency of thin cream.
  • 3.
    Slice chicken and layer on plates with apples and salad leaves. Drizzle with dressing and garnish with walnuts.
