Ingredients (9)
- 2 skinless chicken breast fillets
- 2 tablespoons Cajun seasoning*
- 2 red apples
- Juice of 1 lemon
- 4 tablespoons (1/3 cup) creme fraiche
- 1 tablespoon honey
- 1 tablespoon white wine vinegar
- Baby salad leaves (such as watercress and rocket), to serve
- Toasted walnut pieces, to garnish

1.Preheat oven to 180°C. Coat chicken in Cajun seasoning, place on a lightly oiled baking tray and cook for 15 minutes until cooked through. Set aside to cool.

2.Slice apples and toss in 1 tablespoon lemon juice. In a bowl, place the creme fraiche, honey, vinegar and 1 tablespoon lemon juice, season to taste, then whisk to combine. Add a little warm water until mixture has consistency of thin cream.

3.Slice chicken and layer on plates with apples and salad leaves. Drizzle with dressing and garnish with walnuts.
