Chicken, chive and crème fraîche mac 'n' cheese

Ingredients (14)
- 3 skinless chicken thigh fillets
- 3 garlic cloves, crushed
- Finely grated zest of 1 lemon
- Juice of 1 lemon
- ¼ cup (60ml) extra virgin olive oil
- 2 tbs white wine
- ¼ cup (35g) plain flour
- 250ml crème fraîche
- 1 cup (250ml) pure (thin) cream
- 1 tbs Dijon mustard
- 150g finely grated parmesan
- 1 bunch chives, finely chopped, plus extra to serve
- 300g casarecce or macaroni, cooked according to to packet instructions, drained, refreshed
- 2 corn cobs, kernels sliced off

1.Preheat oven to 200°C. Place chicken on a baking tray lined with baking paper and rub with garlic, lemon zest and juice, 2 tbs oil and wine. Season. Bake for 20 minutes or until cooked through.

2.Chop chicken and place cooking juices, flour, crème fraîche, cream, mustard, parmesan and chives in a bowl. Whisk to combine, then pour into a 1.5-litre baking dish and stir in chicken and pasta. In a bowl, toss corn kernels with remaining 1 tbs oil, then scatter over mac and cheese. Bake for 30 minutes or until golden and bubbling. Scatter with extra chives to serve.
