Chilled tomato soup

Chilled soup is just the ticket for blistering summer days - make it in advance and enjoy for days.
Ingredients (9)
- 4 ripe tomatoes, chopped
- 2 cups (500ml) tomato juice or vegetable and tomato juice
- 1 garlic clove, crushed
- 1 tablespoon caster sugar
- 1 tablespoon olive oil, plus extra to drizzle
- 1 tablespoon balsamic vinegar
- Dash each of Tabasco and Worcestershire sauce (optional), to taste
- 1 tablespoon lime juice
- 100g log goat's cheese

1.Place all the ingredients, except the cheese, in a blender, and puree until smooth. Season with salt and pepper, adding more of the sauces to taste. P

2.our the soup into an airtight container and freeze for 4-5 hours. The soup can be made and frozen up to 1 week in advance.

3.Remove the soup from the freezer 1-2 hours before serving - it will defrost on the way to the picnic, but remain chilled. Divide soup among small bowls.

4.Thinly slice the cheese, then place a round in each bowl, sprinkle with black pepper and drizzle with extra olive oil.
