This herby and tart sauce is the perfect way to cut through a thick marbled steak.

Ingredients (9)

  • 1 bunch rosemary, leaves picked, finely chopped
  • 1 bunch thyme, leaves picked, finely chopped
  • 1 bunch flat-leaf parsley, leaves picked, finely chopped
  • 1/2 bunch sage, leaves picked, finely chopped
  • 1 tsp paprika
  • 1 tsp chilli flakes
  • 2 cloves garlic, finely chopped
  • 1/2 cup (125ml) canola oil
  • 1/4 cup (60ml) red wine vinegar

Method

  • 1.
    Combine herbs, paprika, chilli and garlic in a bowl. Gradually add oil and vinegar until combined. Season with salt flakes and freshly ground black pepper.
