Chipotle prawn tacos

Take taco night outside with these pool party-friendly prawn tacos!

Ingredients (8)

  • 400g green prawns, peeled (tails intact), deveined
  • 1 1/2 tbs chipotle in adobo sauce
  • 1 tbs extra virgin olive oil
  • 1 tbs extra virgin olive oil
  • Juice of 1 lime
  • 1/2 red onion, thinly sliced
  • 1/2 red onion, thinly sliced
  • 8 corn tortillas, warmed

Method

  • 1.
    Place prawns, chipotle sauce and oil in a medium bowl and toss to coat. Roughly mash avocado in a separate bowl with half the lime juice. Season with salt flakes and freshly ground black pepper.
  • 2.
    Heat a large frypan over high heat. Cook prawns for 3-4 minutes until lightly charred. Add remaining lime juice and toss to coat.
  • 3.
    Arrange chipotle prawns, mashed avocado, onion and lettuce in small bowls for people to assemble their own tacos.
