Take taco night outside with these pool party-friendly prawn tacos!
Ingredients (8)
- 400g green prawns, peeled (tails intact), deveined
- 1 1/2 tbs chipotle in adobo sauce
- 1 tbs extra virgin olive oil
- 1 tbs extra virgin olive oil
- Juice of 1 lime
- 1/2 red onion, thinly sliced
- 1/2 red onion, thinly sliced
- 8 corn tortillas, warmed

1.Place prawns, chipotle sauce and oil in a medium bowl and toss to coat. Roughly mash avocado in a separate bowl with half the lime juice. Season with salt flakes and freshly ground black pepper.

2.Heat a large frypan over high heat. Cook prawns for 3-4 minutes until lightly charred. Add remaining lime juice and toss to coat.

3.Arrange chipotle prawns, mashed avocado, onion and lettuce in small bowls for people to assemble their own tacos.
