Hate sharing dessert? Whip up these chocolate pots come Valentine's Day. "Nobody wants to share chocolate, so to keep it romantic I’ve made individual pots so there are no arguments involved," says chef Matt Wilkinson.

Ingredients (6)

  • 50g dark chocolate, chopped
  • 150ml thickened cream
  • 2 tsp raw sugar
  • 1 tsp vodka (optional)
  • 2 egg yolks
  • Pure (thin) cream, to serve

Method

  • 1.
    Preheat oven to 180°C. Place two 1 cup (250ml) ramekins or glasses in a small roasting pan.
  • 2.
    Combine the chocolate, thickened cream, sugar and vodka, if using, in a heatproof bowl set over a saucepan of gently simmering water (don’t let the bowl touch water), stirring frequently for 4-5 minutes until melted and combined. Set aside and cool slightly.
  • 3.
    Whisk egg yolks until pale, then stir into chocolate mixture. Divide batter evenly between the two ramekins. Fill pan with enough boiling water to come halfway up the sides of the ramekins. Bake for 20 minutes or until set.
  • 4.
    Remove tray and set aside for 5 minutes to cool slightly.
  • 5.
    Serve warm or chilled with cream.
