Maggie Beer's Seville and almond chocolate figs
Chocolate and figs are the perfect end to any dinner party.
Ingredients (6)
- 100g toasted blanched almonds, cooled
- 2 tbs Seville orange or cumquat marmalade
- 25g dark chocolate, grated
- 12 (250g) Turkish dried figs
- 150g dark chocolate, melted
- 1 1/2 cups (375ml) old sweet white port or sweet sherry

1.Process the almonds in a food processor until finely chopped. Add marmalade and grated chocolate and process until well combined and forming a ball.

2.Gently prise out the stalk of the fig so it stands up. With a small knife, carefully cut open bottom of each fig to allow for stuffing. Using wet fingers, carefully stuff figs with the mixture and reshape them so they look like fresh figs.

3.Place melted chocolate and sweet port or sherry in a saucepan and stir over low heat until combined. Add figs and gently simmer over low heat for 20 minutes or until the skin of the figs is saturated with chocolate.

4.Transfer figs to a serving dish while still warm and pour over as much of the sauce as you wish. The remainder can be refrigerated in an airtight container and reheated to serve with, perhaps, some grilled fresh figs and creme fraiche.
