Need a last-minute gift idea? These easy Christmas cookies are quick to make and super simple to whip up with common pantry staples. Great to make with kids, these festive biscuits need only a few ingredients like butter, flour, eggs, sugar and the zest of one lemon to make a deliciously-crumby treat. Decorate with sprinkles of your choice (although we used red, green and white for Christmas!) and let the fun unfold.

  • 400g unsalted butter
  • Finely grated zest of 1 lemon
  • 220g icing sugar
  • 3 1/3 cups (500g) plain flour
  • 4 egg yolks
  • Red, green and white sprinkles, to decorate

Method

  • 1.
    Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper.

    In a stand mixer fitted with the paddle attachment, beat the butter, lemon zest and icing sugar for 6-8 minutes, until soft and pale. Add the flour, egg yolks and a pinch of salt flakes and beat to form a soft dough. Roll heaped 1 tbs measures into balls and place on prepared trays. Chill for 10 minutes (see note).

    Place a few spoonfuls of red sprinkles in 1 small bowl and a few spoonfuls of green sprinkles in another small bowl. Mix a few spoonfuls of red, white and green sprinkles in a third bowl. Toss one-third of dough balls in red sprinkles to coat and place on tray. Toss one-third of dough balls in green sprinkles to coat and place on tray. Toss remaining third of dough balls in mixed sprinkles to coat and place on tray. Be sure to leave 4cm between each dough ball, as they spread a little when baking.
  • 4.
    Bake for 18-20 minutes. Cool on tray.

Recipe Notes

You need to chill the dough for a short time so it keeps its shape when rolled, but if you chill it for too long, the sprinkles will not stick. If the dough is too cold, bring back to room temperature before rolling in sprinkles.
