Christmas panettone pudding
An ultra-easy pudding you can make in 20 minutes. That's what we call a merry Christmas!
Ingredients (10)
- 100g white chocolate, chopped
- 150ml pure (thin) cream
- Frozen mixed berries, to serve (we used cherries, raspberries and mulberries)
Christmas pudding
- 21⁄2 cups (450g) mixed dried fruit (we used a mix of sultanas, cranberries, chopped dates and glace cherries)
- 500g panettone, torn into small pieces
- 100g white chocolate, melted, cooled
- 60g unsalted butter, melted, cooled
- 1⁄2 cup (125ml) sherry or brandy
- 1 tsp each ground cinnamon and freshly grated nutmeg
- 1⁄2 tsp mixed spice
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Line a 1.5L (6 cup) Christmas pudding bowl with plastic wrap, leaving plenty overhanging. Place the berries in a zip-lock bag and freeze until ready to serve.

2.For the Christmas pudding, place all ingredients in a bowl and stir well to combine. Spoon into the lined bowl and press down to compress mixture. Cover with overhanging plastic wrap, then chill for at least 2 hours, or overnight.

3.For the glaze, place the chocolate and cream in a heatproof bowl and set over a saucepan of simmering water (don’t let the bowl touch the water). Stir until melted and smooth, then set aside to cool.

4.Remove pudding from mould and discard plastic wrap. Drizzle chocolate glaze over pudding and top with frozen berries.
