Citrus, fennel, radish and sorrel salad
This light and fresh salad makes a welcome addition to any summer get together. Recipe by Andy Emerson and Mitch Orr from ACME restaurant.
Ingredients (7)
- 3 oranges
- 1/4 cup (60ml) olive oil
- 2 fennel bulbs, thinly sliced on a mandoline
- 10 radishes, thinly sliced on a mandoline
- 2 pink grapefruits, peeled, segmented
- 1 pomelo, peeled, segmented
- Baby red vein sorrel, to serve
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Juice 1 orange and place in a bowl with olive oil. Whisk to combine and season. Peel and segment remaining oranges.

2.Arrange fennel and radish in a serving bowl and top with citrus segments.

3.Scatter over red vein sorrel leaves and spoon over orange dressing to serve.
