Coconut fudge bliss balls

"A small hit of salt tempers the sweetness in these energy-packed sweets. Store these moreish treats in the fridge in an airtight container for up to two weeks," says Lucy Busuttil.

Ingredients (9)

  • 2 cups (340g) pitted prunes
  • 1 cup (150g) macadamias
  • 1/2 cup (45g) desiccated coconut
  • 1/2 cup (80g) chia seeds
  • 1/4 cup (25g) raw cocoa powder
  • 1 1/2 tbs coconut oil, melted
  • 3 tsp vanilla extract
  • 1 tsp ground cardamom (or ground cinnamon)
  • 1/2 tsp salt flakes

Method

  • 1.
    Place prunes and macadamias in a food processor and blitz until finely chopped. Add 1/2 cup coconut and remaining ingredients and process until mixture comes together.
  • 2.
    Place remaining coconut in a small tray. Roll heaped tablespoonfuls of mixture into balls, then roll them in coconut. Chill to firm up before serving.
