Coconut, mango and kaffir lime popsicles
Make a big splash at your next summer event with these impressive popsicles.
Ingredients (5)
- 1 large (600g) mango, peeled, chopped
- 2 kaffir lime leaves, very finely chopped
- 1/3 cup (50g) roasted, chopped cashews
Coconut layer
- 400ml can coconut cream
- 2 tbs runny honey
Don't forget you can add these ingredients to your Woolworths shopping list.

1.To make the mango layer, whiz mango in a blender until smooth. Stir through kaffir lime leaves. Divide among popsicle moulds (1 1/2 tbs per popsicle). Freeze for 2 hours or until partially frozen.

2.For the coconut layer, whisk coconut cream and honey together in a bowl until well combined. Divide among popsicle moulds, leaving 1cm unfilled at top of each mould. Freeze for 2 hours or until partially set. Scatter with cashews, pushing gently in. Top mould with aluminium foil and push 1 popsicle stick into the centre of each mould two-thirds of the way down. Freeze for 4 hours or until frozen. Serve immediately once removed from moulds.
Recipe Notes
Begin this recipe at least 8 hours ahead. You will need 10 x 100ml popsicle moulds and 10 popsicle sticks.
