Coconut prawns with wasabi mayonnaise
Japanese mayonnaise is even more addictive when you add a swipe of eye-watering wasabi. Pair it with coconut prawns and you're on to a winner.

Ingredients (9)

  • 250g Japanese mayonnaise
  • 3 tsp wasabi paste, or to taste
  • Juice of 1 lime
  • 1 cup (150g) plain flour
  • 60g shredded coconut
  • 1 egg
  • 1 tbs milk
  • 24 green prawns, peeled (tails intact), deveined
  • 2 cups (500ml) sunflower oil

Method

  • 1.
    Combine the mayonnaise, wasabi paste and lime juice in a small bowl. Chill until ready to serve.
  • 2.
    Season the flour with salt and pepper. Place the flour and coconut on separate plates. Whisk egg and milk together in a bowl. Coat the prawns first in flour, then the egg mixture. Coat well in coconut.
  • 3.
    Heat the oil in a wok over mediumhigh heat. Shallow-fry prawns, in batches, for 3-4 minutes until golden. Remove with a slotted spoon and drain on paper towel. Serve with wasabi mayonnaise.
