Coconut prawns with wasabi mayonnaise

Japanese mayonnaise is even more addictive when you add a swipe of eye-watering wasabi. Pair it with coconut prawns and you're on to a winner.
Ingredients (9)
- 250g Japanese mayonnaise
- 3 tsp wasabi paste, or to taste
- Juice of 1 lime
- 1 cup (150g) plain flour
- 60g shredded coconut
- 1 egg
- 1 tbs milk
- 24 green prawns, peeled (tails intact), deveined
- 2 cups (500ml) sunflower oil

1.Combine the mayonnaise, wasabi paste and lime juice in a small bowl. Chill until ready to serve.

2.Season the flour with salt and pepper. Place the flour and coconut on separate plates. Whisk egg and milk together in a bowl. Coat the prawns first in flour, then the egg mixture. Coat well in coconut.

3.Heat the oil in a wok over mediumhigh heat. Shallow-fry prawns, in batches, for 3-4 minutes until golden. Remove with a slotted spoon and drain on paper towel. Serve with wasabi mayonnaise.
