Ingredients (8)
- 185g salted butter, chopped
- 300g dark (40%) chocolate, chopped
- 1 cup (250g) firmly packed brown sugar
- 2/3 cup (150g) caster sugar
- 1/2 cup (75g) leftover coffee grounds
- 1/4 cup (25g) Dutch cocoa
- 4 eggs
- 1 cup (150g) plain flour

1.Preheat oven to 170°C/150°C fan-forced. Grease and line base and 2 long sides of a 30cm x 20cm lamington pan.

2.Place butter in a medium saucepan over medium-low heat. Once butter starts to melt, add chocolate and cook, stirring, until smooth and combined. Add both sugars and whisk until smooth. Remove from heat and whisk in coffee grounds and cocoa until combined. Add eggs and whisk until combined. Add flour and stir with a spatula until combined.

3.Pour into prepared pan and bake for 25 minutes or until a skewer inserted in centre comes out with a few crumbs attached. Cool brownie in pan. Serve cut into squares.
Recipe Notes
Coffee grounds are great for baking. They do absorb moisture like flour, so if adding when making cakes or brownies, you may need to reduce the flour by the amount of coffee you’ve added to maintain the texture of the cake.
