Crab and samphire salad

Samphire is a coastal succulent available from greengrocers. If unavailable, shaved asparagus, fennel or radish can be used.
Ingredients (4)
- 1/4 cup (60ml) extra virgin olive oil
- Juice of 1 lemon
- 150g samphire
- 200g cooked crabmeat, picked
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Whisk oil and lemon juice in a bowl, season and set aside.

2.Blanch samphire in a pan of boiling water over high heat for 30 seconds. Drain, and refresh in iced water. Pat dry with paper towel.

3.Combine crab, samphire and dressing in a bowl and gently toss to combine.
