Method

  • 1.
To make the mousse, combine cream and milk in a pan over medium heat. Whisk egg yolks and sugar together until smooth. As soon as milk mixture starts to bubble, pour one-third into egg yolk mixture, whisking constantly. Pour back into the pan and continue cooking, stirring with a wooden spoon, for 8 minutes or until thickened and smooth. Stir in the passionfruit pulp, reserving a little pulp to serve.
  • 2.
Place chocolates in a large bowl. Strain passionfruit mixture into the bowl, stirring until melted. Spoon into small serving dishes and chill for 3-4 hours or until set.
  • 3.
Preheat oven to 170°C. Grease a baking tray and line with baking paper. For the crumble, combine flour and sugar in a bowl, then rub in butter until it resembles breadcrumbs. Stir in oats, Brazil nut, cinnamon, vanilla seeds and a pinch of salt, then spread over prepared tray. Bake, stirring occasionally, for 15-20 minutes or until golden. Set aside to cool.
  • 4.
Top mousses with the crumble and remaining passionfruit pulp to serve.
