Dark chocolate and passionfruit mousse
This decadent chocolate mousse gets a zing from the addition of passionfruit.
Ingredients (14)
- 200ml pure (thin) cream
- 300ml milk
- 7 egg yolks
- 1/2 cup (110g) caster sugar
- Pulp of 3 passionfruit, or 110g canned passionfruit pulp
- 300g dark (70%) chocolate, chopped
- 160g milk chocolate, chopped
Brazil nut crumble
- 1/3 cup (50g) plain flour
- 30g caster sugar
- 30g unsalted butter, cut into 2cm pieces, chilled
- 25g rolled oats
- 8 Brazil nuts, chopped
- 1 tsp ground cinnamon
- 1 vanilla bean, split, seeds scraped

1.To make the mousse, combine cream and milk in a pan over medium heat. Whisk egg yolks and sugar together until smooth. As soon as milk mixture starts to bubble, pour one-third into egg yolk mixture, whisking constantly. Pour back into the pan and continue cooking, stirring with a wooden spoon, for 8 minutes or until thickened and smooth. Stir in the passionfruit pulp, reserving a little pulp to serve.

2.Place chocolates in a large bowl. Strain passionfruit mixture into the bowl, stirring until melted. Spoon into small serving dishes and chill for 3-4 hours or until set.

3.Preheat oven to 170°C. Grease a baking tray and line with baking paper. For the crumble, combine flour and sugar in a bowl, then rub in butter until it resembles breadcrumbs. Stir in oats, Brazil nut, cinnamon, vanilla seeds and a pinch of salt, then spread over prepared tray. Bake, stirring occasionally, for 15-20 minutes or until golden. Set aside to cool.

4.Top mousses with the crumble and remaining passionfruit pulp to serve.
