There's sure to be something to suit everyone on this antipasto spread.

Ingredients (10)

  • 3-4 vine-ripened cherry tomatoes
  • Extra virgin olive oil, to drizzle
  • 4 baby (cherry) bocconcini
  • 1/4 teaspoon dried red chilli flakes
  • 1/4 teaspoon dried basil
  • 1/2 roasted capsicum, sliced
  • 1-2 thin slices prosciutto
  • 2 marinated artichoke hearts, halved
  • 1/4 cup (about 8) black olives
  • Grissini, to serve

Method

  • 1.
    Preheat oven to 180°C. Place tomatoes on a baking tray, drizzle with oil and season with salt and pepper. Bake for 5 minutes, until tomatoes just begin to soften. Remove and cool.
  • 2.
    Lightly roll 2 bocconcini in chilli and 2 in basil. Arrange all ingredients on a plate, drizzle with extra virgin olive oil and season to taste.
