There's sure to be something to suit everyone on this antipasto spread.
Ingredients (10)
- 3-4 vine-ripened cherry tomatoes
- Extra virgin olive oil, to drizzle
- 4 baby (cherry) bocconcini
- 1/4 teaspoon dried red chilli flakes
- 1/4 teaspoon dried basil
- 1/2 roasted capsicum, sliced
- 1-2 thin slices prosciutto
- 2 marinated artichoke hearts, halved
- 1/4 cup (about 8) black olives
- Grissini, to serve

1.Preheat oven to 180°C. Place tomatoes on a baking tray, drizzle with oil and season with salt and pepper. Bake for 5 minutes, until tomatoes just begin to soften. Remove and cool.

2.Lightly roll 2 bocconcini in chilli and 2 in basil. Arrange all ingredients on a plate, drizzle with extra virgin olive oil and season to taste.
