Matt Preston’s Bloody Mary
Matt Preston is famous around the delicious. office for his rendition of a Bloody Mary. The secret to this killer drink (or party starter) is the homemade celery salt. If you don't believe us, try it. You'll need it this weekend.

Ingredients (10)

  • ½ cup (125ml) vodka
  • 4 cups (1L) tomato juice, chilled
  • 3 tsp wasabi paste (from the Asian section of supermarkets)
  • 2 tsp Worcestershire sauce
  • 2 tsp horseradish cream
  • 1 tsp Tabasco sauce
  • Juice of 2 lemons, plus extra lemon wedges to serve
  • Large ice cubes and gherkins, to serve

Celery salt

  • ½ bunch celery, leaves picked, celery heart stalks reserved to serve
  • ⅓ cup (30g) salt flakes

Method

  • 1.
    For the celery salt, preheat oven to 90°C and place a heatproof wire rack over a baking tray. Spread celery leaves over rack and bake for 30-35 minutes or until dried but still green. Set aside to cool, then crumble into a bowl and stir through salt flakes. Set aside until needed (salt can be stored, in an airtight container, for up to 4 weeks).

    To make the Bloody Mary, combine all ingredients in a large jug. Fill glasses with ice, then top with Bloody Mary mixture.
  • 3.
    Thread gherkins and extra lemon wedges onto skewers. Divide reserved celery stalks among glasses, top glasses with skewers and scatter ½ tsp celery salt over each glass. Serve immediately.
