This 15-minute pork ramen recipe is all about maximum flavour with minimal effort and just the right amount of heat. It's easy to make and packed with authentic Asian flavours so it's sure to become a family favourite.
Ingredients (15)
- 1/4 cup (60ml) extra virgin olive oil
- 2 garlic cloves, crushed
- 2 long green shallots, thinly sliced
- 1/3 cup (105g) white (shiro) miso
- 4 cups (1L) Massel Chicken Style Liquid Stock
- 1 tbs finely chopped ginger
- 400g pork mince
- 1/3 cup (100g) hot chilli condiment
- 2 tbs rice vinegar
- 1/4 cup (60ml) light soy sauce
- 1 tsp sesame oil
- 4 x 180g packets Fujisaki ramen noodles (from Asian food shops), cooked according to packet instructions
To serve
- Soft boiled eggs
- Sesame seeds
- Seasoned nori

1.Heat 2 tbs oil in a saucepan over medium heat. Add garlic and shallot, and cook, stirring, for 3-4 minutes or until softened. Add miso and stock, and bring to boil.

2.Meanwhile, heat remaining 1 tbs oil in a non-stick frypan over medium-high heat. Add ginger and stir for 1 minute or until fragrant, then add mince and cook, breaking mince up with a wooden spoon, for 8-10 minutes or until crisp and golden. Stir through 1/4 cup (75g) hot chilli condiment. Add remaining 25g chilli condiment to miso broth with vinegar, soy and sesame oil. Divide noodles among bowls and top with broth, mince mixture, eggs, sesame and nori to serve.
