Flatbread with hummus and spiced lamb
“Zucchini adds welcome green to these Middle Eastern-flavoured easy pizzas” - Shannon Bennett.
Ingredients (13)
- 1 large flat focaccia, halved horizontally
- 300g hummus
- 6 (500g) lamb sausages, skins removed
- 150g feta, crumbled
- 1 tbs za’atar
- 1/3 cup (80ml) extra virgin olive oil
- 1 small red onion, cut into thin rings (we used a mandolin)
- 2 tbs red wine vinegar
- 2 green zucchini, cut into matchsticks (we used a julienne peeler)
- ½ cup flat-leaf parsley
- ½ cup mint leaves
- Finely grated zest of ½ lemon
- Juice of 1/2 lemon

1.Preheat oven to 210°C. Line a large baking tray with baking paper. Place focaccia cut-side up on tray and spread with hummus. Top with crumbled sausage meat, feta and za’atar. Drizzle with 2 tbs olive oil. Bake in oven for 20 minutes. Cut each piece into four.

2.Meanwhile, combine onion, vinegar and a pinch of salt flakes in a small bowl and set aside for 10 minutes.

3.When ready to serve, place zucchini, herbs, lemon zest and juice and remaining 2 tbs oil in a bowl, season and toss to combine. Top flatbread with zucchini mixture and drained onion and serve.
