Spicy tomato chutney is the perfect accompaniment to your Indian inspired feast.
Ingredients (10)
- 1 tablespoon ghee
- 6 fresh curry leaves
- 1/4 teaspoon mustard seeds
- 1 dried red chilli, crumbled, or 1/2 teaspoon chilli flakes
- 5 tomatoes, chopped
- 1/4 teaspoon ground turmeric
- 1 cinnamon quill
- 1 tablespoon caster sugar
- 2 tablespoons sultanas
- 1 teaspoon freshly grated ginger

1.Heat the ghee in a frypan over medium-low heat. Add the curry leaves, mustard seeds and chilli, then cook, shaking the pan, for 1 minute or until the seeds start to pop. Add the tomatoes and turmeric, then cook, stirring, for 1 minute. Add the remaining ingredients and 1/3 cup (80ml) water. Bring to the boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the chutney is thick and pulpy. Allow to cool before serving with curry.
