Bella's fried chicken
Fried chicken and hot sauce, whats not to love?
Ingredients (12)
- 1 1/3 cups (200g) plain flour
- 2 1/2 tsp brown sugar
- 2 eggwhites
- 1kg chicken tenderloins
- Sunflower oil, to deep-fry
- Store-bought hot sauce (we used sriracha), to serve
Spice mix
- 2 tsp onion powder
- 1 tsp each sweet paprika , chilli powder, ground white pepper, celery salt and garlic powder
- 1/2 tsp ground allspice
- 1/2 tsp dried sage
- 1/2 tsp dried oregano
- 1/2 tsp dried basil

1.For the spice mix, combine all the ingredients in a bowl.

2.To make the chicken, combine spice mix, flour, sugar and 2 tsp salt flakes in a bowl. Place eggwhites in a separate bowl and whisk until frothy. Dip chicken, 1 piece at a time, in eggwhite, then dip in flour mixture, transfer to a tray and chill for 10 minutes.

3.Half-fill a deep-fryer or large saucepan with sunflower oil and heat to 180°C (a cube of bread will turn golden in 90 seconds when the oil is hot enough).

4.In 3 batches, deep-fry chicken, turning halfway, for 3 minutes or until golden. Remove with a slotted spoon and drain on paper towel. Repeat with remaining chicken.

5.Scatter with salt flakes while hot and serve with hot sauce.
