Ingredients (10)

  • 1 small baguette

Garlic butter

  • 125g unsalted butter, softened
  • 1/4 cup parsley leaves
  • 3 cloves garlic

Herb butter

  • 1 cup mixed chopped fresh herbs
  • 3 eschallots, peeled, chopped
  • 125g unsalted butter, softened

Capsicum butter

  • 100g bought chargrilled capsicum
  • 1 cup grated parmesan
  • 250g unsalted butter, softened

Method

  • 1.
    Place ingredients for your chosen butter in a food processor. Process until well combined. Place in the centre of a piece of aluminium foil and use a knife or spatula to form a rough log shape. Roll the foil around the log and twist ends together to form a firm parcel. Freeze until ready to use.

    Preheat oven to 180°C. To prepare the bread, transfer butter to the fridge for 10 minutes. Cut the baguette crossways into 2cm slices, not cutting right through.
  • 3.
    Unwrap butter and cut into 1/2cm slices. Place a slice of butter between each bread slice. Wrap bread in aluminium foil, twisting ends to secure and bake for 10 minutes. Unwrap and bake for 2 minutes, to crisp.
