P64 Gin and tonic seared scallops

These adults-only scallops are the perfect seafood soiree snack.

Ingredients (8)

  • ⅓ cup (80ml) gin
  • 1 tbs lime juice
  • 1 tsp salt flakes
  • 2 qukes, very finely chopped
  • 1 tbs extra virgin olive oil
  • 16 scallops in their shells
  • 2 finger limes, seeds removed
  • Angostura bitters, to serve (optional)

Method

  • 1.
    Combine gin, lime juice and salt in a small bowl, stirring until salt dissolves. Add half the cucumber.
  • 2.
    Arrange the shells on a serving plate. Heat oil in a large frypan over high heat. Season scallops with salt and pepper and cook for 1 minute each side until golden. Return scallops to their shells and serve immediately with gin dressing, finger lime seeds and remaining cucumber. Add a drop of angostura if you like.
