For a different take on brandy and cigars at the end of the night, have tuiles ready to fill with chocolate mousse!

Ingredients (7)

  • 1/4 cup (55g) caster sugar
  • 60g unsalted butter, softened
  • 2 eggwhites
  • 2 tsp ground ginger
  • 1/2 cup (110g) plain flour
  • 1 1/2 cups (300g) store-bought chocolate mousse
  • Dutch cocoa, to dust

Method

  • 1.
    Beat sugar and butter in a bowl until thick and pale. Add eggwhite and beat slowly until just combined. Add ginger, our and a pinch of salt. Fold until combined.
  • 2.
    Cover with plastic wrap. Chill for 1 hour. Preheat oven to 180°C. Grease 2 baking trays and line with baking paper.
  • 3.
    Place stencil on a prepared tray. Spoon 1 tsp mixture into rectangular cut-out in stencil and use an offset palette knife to spread so it lls the stencil in a thin, even layer.
  • 4.
    Carefully lift stencil. Repeat until trays are full. Bake for 7-8 minutes until edges are golden. While still warm, and working quickly, roll each tuile into a cigar.
  • 5.
    Set aside to cool until crisp. Repeat.
