Golden syrup banana and blueberry bread
Bolster your banana bread with blueberry.

Ingredients (14)

  • 1 1/2 cups plain flour
  • 1 cup self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tsp mixed spice
  • 1 tsp ground cinnamon
  • 1 cup brown sugar
  • 2 large over-ripe bananas, mashed
  • 1/2 cup milk
  • 1/3 cup golden syrup, plus extra to serve
  • 50g butter, melted, cooled
  • 2 eggs, lightly beaten
  • 3/4 cup frozen blueberries
  • 2 tbs quick-cook oats
  • Butter, softened (optional), to serve

Method

  • 1.
    Preheat oven to 180C. Grease a 14cm x 21cm loaf pan. Line base and sides with baking paper, extending paper 2cm above all sides.

    Sift flours, bicarb, mixed spice and cinnamon in a large bowl and stir in sugar. Make a well. Add banana, milk, golden syrup, butter and eggs and stir until just combined. Fold in blueberries. Spoon mixture into prepared pan. Scatter with oats.

    Bake for 1 hour-1 hour 10 minutes or until golden and a skewer inserted in centre of loaf comes out clean. Stand for 10 minutes before transferring to a wire rack to cool completely. Serve with butter and drizzled with extra golden syrup.
