Gorgonzola and avocado grill
This Italianate take on an open toastie breaks loads of rules – most notably cooking avocado and being so guiltily rich. So eat it sparingly and definitely serve it with the suggested guilt-free salad of crisp leaves, apple and celery.

Ingredients (11)

  • 1 large Turkish loaf
  • 2 ripe avocados, sliced 1cm thick
  • 300g Gorgonzola dolce, crumbled

Side salad

  • 2 witlof, leaves separated
  • 1/2 telegraph cucumber, thinly sliced on an angle
  • 1 celery stalk, thinly sliced on an angle
  • 1 crisp green apple, halved, thinly sliced
  • 1/2 cup (50g) walnuts, toasted, roughly chopped
  • 1/2 cup flat-leaf parsley leaves
  • Juice of 1 lemon
  • 1 tbs extra virgin olive oil

Method

  • 1.
    Preheat the grill to high.
  • 2.
    Toast the whole loaf of bread, upsidedown, for 2 minutes until golden. Remove from grill and top the untoasted side with avocado and Gorgonzola. Toast under the grill for 4 minutes until the cheese melts and runs over the avocado.
  • 3.
    Meanwhile, for the salad, toss the witlof, cucumber, celery, apple, walnuts and parsley together in a bowl. Season well with salt and pepper, then dress with lemon juice and olive oil.
  • 4.
    Cut the Turkish bread into wedges and serve immediately with the salad.
