- 2-3 fresh raspberries, plus extra to serve
- 30ml lemon juice
- Dash of cacao nib syrup
- 45ml gin
- 15ml alchermes
- 30ml egg whites
- Ice

1.Muddle raspberries in a cocktail shaker. Add lemon juice and cacao nib syrup. Add gin and alchermes. In a separate shaker, add egg whites and ice. Shake ice and egg whites together. Strain chilled, shaken egg whites into your original shaker. Shake without ice. Pour into your chosen glass, top with two raspberries on a cocktail stick and serve.
