Grapefruit and ginger virgin zingers
These grapefruit and ginger drinks are perfect for summer and are guaranteed to bring a little 'zing' to your next party.
Ingredients (8)
- Juice of 4 pink grapefruit, plus 1 thinly sliced pink grapefruit to serve
- Crushed ice, chilled soda water, halved lemongrass stalks (inner core only) & mint leaves, to serve
Syrup (makes 1L)
- 1 cup (220g) caster sugar
- 2 lemongrass stalks (inner core only), bruised
- Finely grated zest & juice of 3 limes
- 5cm (25g) piece ginger, sliced
- 6 kaffir lime leaves, bruised
- 1 bunch mint, leaves picked

1.For the syrup, place sugar and 1 cup (250ml) water in a saucepan over medium heat. Cook, stirring, for 3-4 minutes until sugar dissolves. Remove from heat, then add the lemongrass, lime zest and juice, ginger, kaffir lime leaves and mint. Set aside for 2 hours to infuse. Strain into a container and chill until ready to use (syrup will keep in an airtight container in the fridge for 3-4 weeks).

2.Place 1 cup (250ml) syrup in a large jug. Add the grapefruit juice and crushed ice, and top with soda water. Serve with grapefruit slices, lemongrass and mint.
