Greek-style pasta salad

Take your Greek salad to the next level with the inventive addition of spiral pasta.

Ingredients (12)
- 300g mixed baby tomatoes, halved
- 1 garlic clove, crushed
- 1 tsp dried oregano
- 500g dried large fusilli
- 150g Greek-style feta, crumbled
- 3/4 cup (115g) mixed pitted olives
- 1 small red capsicum, thinly sliced
- 3 baby cucumbers, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup (60ml) extra virgin olive oil
- 2 tbs red wine vinegar
- 1/4 cup oregano leaves, plus extra to serve

1.Place tomato, garlic and dried oregano in a large serving bowl. Season with salt flakes and freshly ground black pepper and toss to combine. Set aside.

2.Cook pasta in a large saucepan of salted boiling water following packet instructions. Drain and cool under cold running water. Drain well.

3.Add pasta to tomatoes with all the remaining ingredients. Season with salt flakes and freshly ground black pepper and toss to combine. Serve sprinkled with extra oregano.
