There's no better way to appreciate an Italian lunch than with this elegant side.

Ingredients (7)

  • 4 slices sourdough bread, roughly torn
  • 1 tablespoon olive oil
  • 2 garlic cloves, roughly chopped
  • Grated zest of 1 lemon
  • 1/3 cup flat-leaf parsley
  • 400g baby green beans, topped
  • 30g unsalted butter

Method

  • 1.
    Preheat oven to 180°C. Place bread on a baking tray and drizzle with oil. Bake for 10 minutes or until golden and crisp. Cool slightly, then pulse in a food processor with garlic, zest and parsley until a rough crumb mixture. Season and set aside.

    Blanch beans in boiling salted water for 2-3 minutes until just tender but still crisp. Drain, refresh under cold water, then return to the pan. Add the butter to the pan and toss until melted. Divide beans among plates, scatter with pangrattato and serve.
