Learn how to make this South-East Asian staple for a great side dish at any Thai feast.

Ingredients (10)

  • 1 1/2 tablespoons grated palm sugar or brown sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 long red chilli, seeds removed, finely chopped
  • 1/2 green papaya, shredded (a mandoline is ideal)
  • 250g punnet cherry tomatoes, halved
  • 2 cups (160g) bean sprouts, trimmed
  • 2 tablespoons chopped mint
  • 2 tablespoons chopped coriander

Method

    Combine the sugar, fish sauce, lime juice, sesame oil and chilli in a bowl, stirring to dissolve the sugar. Place the remaining ingredients in a separate bowl, then pour over the dressing and toss to combine.
