Green salad with gazpacho dressing
Enjoy the bold flavours of Spanish fare in this homestyle dish.
Ingredients (7)
- 1 each red capsicum & tomato, chopped
- 1/2 Lebanese cucumber, chopped
- 2 garlic cloves, chopped
- 1/2-1 teaspoon caster sugar
- 2 teaspoons sherry vinegar (see note)
- 1/4 cup (60ml) olive oil
- 300g mixed salad leaves (mesclun)

1.Place capsicum, tomato, cucumber and garlic in a blender and whiz until smooth. Pass mixture through a sieve, discarding solids, then season with salt, pepper and sugar to taste. Stir in vinegar and oil. Toss with salad just before serving.
