Ingredients (7)

  • 1 each red capsicum & tomato, chopped
  • 1/2 Lebanese cucumber, chopped
  • 2 garlic cloves, chopped
  • 1/2-1 teaspoon caster sugar
  • 2 teaspoons sherry vinegar (see note)
  • 1/4 cup (60ml) olive oil
  • 300g mixed salad leaves (mesclun)

Method

  • 1.
    Place capsicum, tomato, cucumber and garlic in a blender and whiz until smooth. Pass mixture through a sieve, discarding solids, then season with salt, pepper and sugar to taste. Stir in vinegar and oil. Toss with salad just before serving.
