Green salad with prosciutto shards

Ingredients (8)
- 4 slices prosciutto, rind removed
- 1 egg
- 1 garlic clove
- 40ml (2 tablespoons) lemon juice
- 1 teaspoon Dijon mustard
- 50g Parmigiano Reggiano
- 150ml olive oil
- 2 baby cos lettuces, leaves torn

1.Preheat the oven to 190°C.

2.Place the prosciutto on a tray lined with baking paper and bake for 8-10 minutes or until golden and crisp. Remove and allow to cool, then break into shards.

3.Process the egg, garlic, lemon juice, mustard and half the Parmigiano in a food processor. Slowly add olive oil while processing until you have a rich emulsion.

4.Toss the salad leaves with dressing and place in a serving bowl. Top with prosciutto. Grate remaining parmesan and sprinkle over top.
