Green salad with prosciutto shards
Delicious pieces of prosciutto add a meaty touch to this tasty green salad.

Ingredients (8)

  • 4 slices prosciutto, rind removed
  • 1 egg
  • 1 garlic clove
  • 40ml (2 tablespoons) lemon juice
  • 1 teaspoon Dijon mustard
  • 50g Parmigiano Reggiano
  • 150ml olive oil
  • 2 baby cos lettuces, leaves torn

Method

  • 1.
    Preheat the oven to 190°C.
  • 2.
    Place the prosciutto on a tray lined with baking paper and bake for 8-10 minutes or until golden and crisp. Remove and allow to cool, then break into shards.
  • 3.
    Process the egg, garlic, lemon juice, mustard and half the Parmigiano in a food processor. Slowly add olive oil while processing until you have a rich emulsion.
  • 4.
    Toss the salad leaves with dressing and place in a serving bowl. Top with prosciutto. Grate remaining parmesan and sprinkle over top.
