Grilled berries, vanilla mascarpone
A simple but delicious dessert to finish a long summer barbecue. The rich mascarpone is mixed ahead of time, leaving you only to toss the blueberries over the dying embers, before rejoining your guests. – LH
Ingredients (7)
- 250g mascarpone
- 2 tbs thickened cream
- 1 tbs pure icing sugar, sifted
- 1/2 vanilla bean, split, seeds scraped
- 125g blueberries
- 125g blackberries
- 1 tbs caster sugar
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Combine mascarpone, cream, icing sugar and vanilla pod and seeds in a small bowl and chill until required.

2.Toss the berries and caster sugar together in a bowl.

3.Heat a barbecue or chargrill pan to high heat. Line with aluminium foil and grill berry mixture, tossing regularly, for 2-3 minutes or until blueberries are just starting to burst (if cooking on a woodfired barbecue over embers, grill berry mixture in a heatproof sieve).

4.Remove from grill and serve immediately with vanilla mascarpone.
