Guard's pudding
This budget-friendly steamed pudding is best served warm with a dollop of cream.
Ingredients (9)
- 175g fresh white breadcrumbs
- 25g self-raising flour
- 85g caster sugar
- 125g good-quality strawberry jam, warmed
- 1 teaspoon vanilla extract
- 3 eggs, lightly whisked
- 125g unsalted butter, melted
- 1 teaspoon bicarbonate of soda
- Thick cream, to serve

1.Butter a 1.2-litre pudding basin.

2.Combine breadcrumbs, flour and sugar in a large bowl. Add jam, vanilla, eggs and butter, then stir to combine.

3.Dissolve soda in 1 tablespoon warm water, stir into mixture, then pour into basin. Make a pleat in centre of a sheet of baking paper (to allow for expansion) and use to cover pudding. Secure with string, then cover with foil. Place in a saucepan, add water to come halfway up sides of the basin, then bring to boil, cover, reduce heat to low and steam for 2 hours. Remove and set aside for 5 minutes. Turn out and serve with cream.
