Harissa, smoked salmon and chive muffins

Helena Moursellas' recipe marries classic complementary flavour combos and pops them in a muffin.
Ingredients (9)
- 1 egg, beaten
- 1 cup (250ml) milk
- 1/4 cup creme fraiche, plus extra to serve
- 1/3 cup (80ml) extra virgin olive oil
- 2 tsp harissa
- 2 cups (300g) self-raising flour, sifted
- 100g smoked salmon, roughly chopped plus 100g, sliced
- 1/2 bunch chives, finely chopped, plus extra to serve
- Lemon zest, to serve

1.Preheat oven to 180°C. Grease a 12-hole muffin pan.

2.Whisk the egg, milk, creme fraiche, oil and harissa in a bowl.

3.In a separate bowl combine flour, chopped salmon, chives and 1 tsp salt flakes. Stir in egg mixture to just combine, then divide evenly among muffin pan. Bake for 25 minutes or until lightly browned. Transfer to a wire rack to cool.

4.Top with lemon zest, extra creme fraiche, chives and sliced salmon to serve.
