Hasselback glazed ham

If you only want a smaller ham and your family usually always fights over the yummy glazed crispy bits, this recipe is for you. Slicing the ham hasselback style and brushing the glaze all over and between the slices will deliver maximum flavour and plenty of caramelised goodness for everyone to share.

Hasselback glazed ham

Ingredients (6)

  • 2.5kg boneless quarter leg ham (see recipe notes)
  • 1/2 cup (125g) firmly packed brown sugar
  • 1 tbs English mustard
  • 1 1/2 tbs apple cider vinegar
  • 1 1/2 tbs maple syrup
  • Generous pinch ground cloves

Method

  • 1.
    Preheat oven to 180°C/160°C fan-forced.
  • 2.
    To remove the skin from the ham, use a small sharp knife to cut an incision around the base of the hock. Carefully run the knife under the skin and around the edge of the ham. Loosen the skin by running your fingers between the skin and fat, then remove the skin and discard. Using a large knife, slice the ham in 0.5cm-thick slices, without cutting all the way through to the bottom.

    To make the glaze, place sugar, mustard, vinegar, maple syrup and cloves in a small bowl and mix well.
  • 4.
    Place ham in a baking dish and brush over the glaze, making sure to brush between each cut. Roast for 30 minutes, then baste and roast for another 1 hour 10 minutes, basting every 15 minutes until golden brown and caramelised. Remove from the oven and serve warm.

Recipe Notes

Quarter leg hams are sold either with the bone in or boneless. Make sure you choose a boneless ham so you can slice it.
