Healthy son-in-law eggs
These Thai-style eggs are traditionally deep-fried and doused in sugary caramel. Here we give them a healthier twist.
Ingredients (9)
- 30g coconut oil
- 1/3 cup (80ml) fish sauce
- 1/3 cup (80ml) maple syrup
- 4cm piece (20g) ginger, sliced
- 2 tsp hot chilli sauce
- 6 dried red chillies
- Juice of 2 limes
- 6 soft-boiled eggs
- Coriander sprigs, baby red shiso, fried shallots, black and white sesame seeds and bean sprouts, to serve

1.Combine oil, fish sauce, maple, ginger, chilli sauce, dried chillies and 2 tbs water in a saucepan over medium heat. Simmer for 8-10 minutes or until thickened.

2.Remove from heat, stir through lime juice and cool completely.

3.Divide eggs, herbs, shallots, sesame seeds and bean sprouts among bowls. Drizzle with dressing to serve.
