Herb and cheese soufflés
Ingredients (8)
- 2 tbs Panko Breadcrumbs
- 60g butter
- ¼ cup plain flour
- 1 cup warm milk
- ½ cup grated cheese
- 2 tbs grated parmesan
- 1 tbs finely chopped chives or parsley
- 4 eggs, at room temperature

1.Preheat oven to 200°C. Grease 4 x 1-cup capacity soufflé dishes. Add crumbs and turn to coat inside of dishes. Shake out excess. Place a tray into oven to preheat.

2.Melt butter in a small saucepan over medium heat. Add flour, stir well to combine then stir over heat for 1 minute. Remove from heat and gradually whisk in milk until smooth. Return to heat and stir until sauce boils and thickens. Remove from heat, add cheeses and herbs, season and stir until smooth.

3.Separate each egg, one at a time, beating yolks into the sauce and placing whites into a clean bowl. Beat eggwhites until stiff peaks form. Gently fold into sauce mixture.

4.Divide mixture evenly between dishes and smooth tops. Place onto preheated tray and bake for 20 minutes until puffed and golden. Serve.
