So fresh, so simple, so full of flavour. You'll be making this dip on repeat – it's heavenly with crusty sourdough or seeded crackers.

Ingredients (7)

  • 1 avocado
  • Generous handful of soft herbs (such as parsley, chervil, basil or, more sparingly, lovage), finely chopped, plus extra leaves, to serve
  • Tender tips from a few springs of hard herbs (such as rosemary, thyme, oregano or lemon thyme), finely chopped
  • Finely grated zest and juice of 1 medium lemon, plus lemon wedges, to serve
  • 1 tbs extra virgin olive oil
  • Crumbled creamy feta, to serve
  • Sliced sourdough baguette, to serve

Method

  • 1.
    Using a fork or potato mashed, roughly mash the avocado, herbs, lemon zest and juice and oil in a large bowl. Season with salt flakes and freshly ground black pepper, then transfer to a serving dish.
  • 2.
    Top with a little feta and extra soft herbs. Serve with sourdough and lemon wedges.
