Homemade limoncello

Ingredients (3)
- 10 organic unwaxed lemons
- 1L (4 cups) vodka
- 3 1/3 cups (735g) caster sugar

1.Begin this recipe at least 2 weeks ahead.

2.Remove the zest from the lemons using a vegetable peeler, discarding the white pith. Place in a 2.25L (9 cup) sterilised jar. Cover with vodka, seal and set aside in a cool, dark place for 1 week.

3.Combine the sugar and 3 cups (750ml) boiling water in a jug, stirring until sugar dissolves. Set aside to cool. Add to the vodka mixture, then seal and invert. Set aside for a further 1 week before serving.
