Jaffa-mousse-and-cherry-parfaits-with-double-cream
A trifle of sorts, this smooth jelly is topped with rich, orange spiked chocolate mousse, juicy cherries and indulgent cream.

Ingredients (11)

  • 85g packet raspberry jelly
  • 1 tsp powdered gelatine
  • ½ cup (100g) drained morello cherries
  • 400g store-bought chocolate mousse
  • ½ tsp orange essence
  • 133g packet plain Oreos
  • Finely grated zest of 1 orange
  • ½ tsp mixed spice
  • 400ml Bulla double cream
  • Chocolate, shaved, to serve
  • Glace cherries, to serve

Method

  • 1.
    Combine jelly crystals and powdered gelatine in a heatproof jug. Add 2 cups (500ml) boiling water and mix until dissolved. Divide morello cherries and jelly liquid between 6 glasses and chill overnight to set.

    Combine chocolate mousse and orange essence in a bowl.
  • 3.
    Whiz Oreos, orange zest and mixed spice in a food processor until finely chopped.
  • 4.
    Dollop half the cream on top of the jelly. Top with a little crushed biscuit mixture and a spoonful of mousse, then more biscuit mixture. Finish with another dollop of cream. Chill for 1 hour to firm up.
  • 5.
    Top parfaits with chocolate and cherries to serve.
